Ingredients (Serves 2~3)
- 1 package GreeNoodle plain (2 noodles)
- 3 lettuce leaves
- 1/3 cucumber
- 1/2 carrot
- 1 scallion
- Parsley to garnish
- 1/2 mango
- ½ cup salad dressing (sesame, miso, Thai peanut sauce or teriyaki)
Directions
- 1. Cut lettuce into 2- inch squares.
- 2. Shred cucumber and carrot.
- 3. Cut scallion into ½ inch long pieces.
- 4. Slice mango.
- 5. Cook noodles in boiled water for 3 min, and immediately drain, rinse with cold water and drain well.
- 6. Place lettuce on a flat plate, put noodles on top and arrange mixed vegetables and mango over it.
- 7. Pour your favorite dressing over and garnish with parsley.
You can add any topping you like such as tofu, tomato and avocado to this salad.
Adding slices nuts gives crunchiness and makes it a Southeast Asian flavor.

- Green Noodle 1 pack (2 blocks)
- Ground Meat 4-6 oz
- Onion ½ medium
- Carrot ½
- Green Onion 2 stalks
- General’s Tso’s Sauce 6 oz
- Olive Oil 2 tea spoon
- Salt & White Pepper to taste
Directions
- 1. Cook Green Noodle for 2 minutes in the boiling water, drain and set aside
- 2. Slice Onion and Carrot thinly, cut Green Onion 1 inch
- 3. Heat Olive Oil in the flying pan and cook Ground Meat
- 4. Season meat with salt and pepper
- 5. Add sliced and cut vegetable
- 6. Add Generals Tso’s Sauce and stir few more minutes
- 7. Add cooked noodle and stir
- 8. Serve and enjoy!
